Blueberry and Banana Baked Oatmeal

It’s been a few years since I’ve made this recipe, I don’t know why to be honest. I used to make a tray that would serve me for the whole week. It was my breakfast of choice for months! Reheats really well, it’s delicious, and the best part is that everyone that has tried it has loved it. I find the sweetness of the bananas, and how the blueberries burst with flavor once they are baked to be a delicious combination.

Old fashion rolled oats are ideal for this recipe because you want them to absorb all the flavors while baking, but any type of oats would work just fine. You can add chopped walnuts or pecans to the mix for extra texture, or peanut butter for another flavor profile.

You will need:

  • 1 cup of oats

  • 2 ripe bananas

  • 1 cup of blueberries

  • cinnamon

  • maple syrup or any sweetener (optional)

  • 1/2 cup of milk of choice

  • yogurt for topping

  • nut butter for topping

Instructions:

  1. Preheat the oven to 350 degrees.

  2. In a bowl, add the oats with boiling water covering them just enough, and let them sit for about 10 minutes.

  3. While the oats sit, smash the bananas and mix with the blueberries, cinnamon and the sweetener.

  4. Once the oats have soaked all the water, incorporate the banana and blueberry mixture, add the milk and mix until combined.

  5. Transfer to a baking dish and bake for 20 minutes.

You can pair it with peanut butter and yogurt. The warm of the oats and the cold of the yogurt creates the perfect contrast. I use a dairy free coconut yogurt, but any plain yogurt would work as well.

We almost had the entire tray this morning, and forgot the plan was to have some left overs for the week. It’s such a perfect breakfast for a cold winter morning. It’s comforting and sweet. It’ll be a hit for sure!
