Honey Olive Oil Cornbread
I went to a new coffee shop that is close to my office this week, and they had a Honey Cornmeal Olive Oil Cake. I didn’t get it there and then, but went back in the afternoon and they were sold out already. Devastated. That cake was living in my head rent free all day.
so I decided to go to the store, buy the ingredients and make my own version.
Now, I never tried this cake so I have no idea how it takes like, but I am loving my version. I am using yogurt on this recipe, as mere coincidence I found this french yogurt, Le Fermiere, in an Orange Blossom Honey flavor, and grabbed one for the cake. Best surprise ever.
you will need:
1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup borwn sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1/3 cup olive oil
1 large egg
1 cup milk
1 cup honey yogurt
Mixed nuts
Instructions:
Preheat the oven to 400 degrees
Mix all the wet ingredients, then incorporate the dry ones until everything is fully combined
In a baking dish with parchment paper, add the mixture and top it with sprinkles of brown sugar and chopped mixed nuts
Bake for 25-30 minutes, until golden and the center is fully cooked
